One Pot Meal – Cheesy BBQ Ranch Chicken Skillet

Is there anything better than one pot meals?

Super simply, shockingly delicious, and virtually zero cleanup. Makes cooking so worth it! All of the best parts, none of the worst parts. I love the way the flavors all blend together to create something beyond your typical dinner. Just perfection!

I have always loved the flavors in this One Pot BBQ Ranch Chicken Skillet. If I order chicken tenders (which is my go to), you better believe I am dipping them in ranch and bbq sauce. They just play off one another so well and help to make this one pan meal extra cozy. Match made in heaven! 

I saw at the grocery store a new type of ranch. Well maybe not new, but new to me! The only other flavor of ranch my family gets is “Greek Style” – shocking I know.

Anyway! There are many flavors- Honey BBQ, Buffalo, Sriracha, and Cilantro Lime are just a few. My favorite is the Cilantro Lime. The cilantro and lime are both subtle within the dressing and I am simply obsessed with it. (Any ranch will do – I know some people do not like cilantro – just eliminate the cilantro and it is still AMAZING).

It takes about 45 minutes total. 10 minutes prep and 35 cooking.

An oven-safe skillet is needed. I recommend a cast-iron skillet (I got one recently and haven’t stopped using it).

Preheat your oven to 350F. While it is preheating, heat the olive oil in your skillet over medium high heat. Place seasoned chicken thighs down in the skillet and cook each side for about 5 minutes. While the chicken is cooking – brush each side with bbq sauce while the other side cooks). Set aside the chicken after the 10 minutes.

Don’t clean out your skillet – place the corn and beans in and cook for 2-3 minutes whil

 

e stirring. After, add the cilantro and ranch dressing. Pour in the uncooked rice and stir until the rice is coated with the mixture. Put the chicken back in the skillet – they will only be halfway covered as shown above! No need to stir!

Cover the skillet and place in the preheated oven for 30 minutes.

After the 30 minutes, remove from oven (CAREFUL I BURNED MYSELF – shocker I know!) and sprinkle with cheese and tomatoes. Return to the oven for 5-10 more minutes or until cheese is fully melted and chicken is cooked through.
Mine took about 10 minutes to get the cheese all melted and gooey and perfect.
