Hey foodies! I know it has been awhile.
Work has been kicking my butt and I actually joined Rodan + Fields and am selling really good skincare products now! Busy Busy Busy! But don’t worry, I am back on track so expect delicious recipes each week again! This week – an oldie but a goodie – chicken tetrazzini!
Chicken Tetrazzini! Welcome to the 90s.
I am throwing it back to a recipe that tastes like my childhood. Which is funny, because I don’t necessarily remember my mom ever making Chicken Tetrazzini until I was older, but I do remember the word tetrazzini being thrown around in the context of creamy noodle dishes, and I do remember loving it. I have been on a salmon kick lately, but I can’t seem to help it because it’s just THAT GOOD. Salmon takes hard,y any time to cook, it makes such a healthy meal option and there are so many delicious ways you can make it so it’s pretty much a no- Rainer as to why it is one of my favorite dishes to cook. I’m so excited to share this Hummus Crusted Salmon with a fresh lemon arugula salad! Continue Reading “Hummus Crusted Salmon with Lemon Arugula Salad”
Is there anything better than one pot meals?
Super simply, shockingly delicious, and virtually zero cleanup. Makes cooking so worth it! All of the best parts, none of the worst parts. I love the way the flavors all blend together to create something beyond your typical dinner. Just perfection!
I have always loved the flavors in this One Pot BBQ Ranch Chicken Skillet. If I order chicken tenders (which is my go to), you better believe I am dipping them in ranch and bbq sauce. They just play off one another so well and help to make this one pan meal extra cozy. Match made in heaven! Continue Reading “One Pot Meal – Cheesy BBQ Ranch Chicken Skillet”
Hey Hey Foodies!
Who likes Brunch?! For someone who doesn’t always like eggs – I somehow am OBSESSED with Brunch! Can you even believe this?
That I’m making a spicy ancho chili homemade tomato simmer sauce (whatever you do, don’t look back at the last month of recipes to check if this is my new obsession, but for real please don’t) to cover a crowd of spicy, salty, pan-fried potatoes, a handful of shredded spinach, and, uhhhhhm, EGGS?
Hold the phone. Continue Reading “Perfect Brunch Dish | One Pot Spicy Eggs and Potatoes”
Hey hey Foodies – Happy Thursday!
So you will be happy about this recipe – less than 300 calories and less than 30 minutes. But most importantly – Delicious
So if you know me personally, you know that my dad had a minor heart attack. ( I was supposed to say minor – but a heart attack is NOT minor regardless, right?)
Anyway! Food-wise, I have been focused on us eating at home as often as we can and making meals on the simpler side, usually consisting of a lean protein (grilled, sautéed or roasted) and two veggie sides – to keep things light and interesting! We love carbs, so this is definitely an adjustment. Pasta is usually my go to side with meats!
This turkey piccata was a recent favorite of mine. It’s shockingly rich and flavorful for only 275 calories per serving. And if you choose to serve it over cauliflower rice like I did (perfect for sopping up that delicious sauce), the meal will be completely filling and won’t run you more than 400 calories max. Happy Monday Foodies!
Who Likes Pad Thai?
One of my favorite things to order for take out is pad thai. I just love all the flavors and textures! I set out to learn to make pad thai at home, and I can definitely say that my version tastes just like the one that I get from my favorite Thai restaurant. I may never order take out again! (actually I don’t know – I can be lazy and just not want to cook)
This chicken pad thai is a combination of diced cooked chicken, scrambled eggs, rice noodles, veggies and herbs, all tossed in a sweet and savory sauce. I was able to find rice noodles in the ethnic section of my grocery store, and they were actually labeled as pad thai noodles. I typically use boneless skinless chicken breasts that are cut up into small pieces and sautéed, but in a pinch you could also use shredded rotisserie chicken.
I kept this pad thai pretty basic because that’s the way my favorite restaurant makes it, but you could easily substitute shrimp for the chicken or add in more veggies like broccoli, mushrooms and peppers.
These delicious noodles are finished off with a sprinkling of peanuts. The peanuts add the perfect amount of savory crunch. Continue Reading “Chicken Pad Thai | Make at Home in 20 Minutes |”
